Unlimited really limited?

I read that there are some disadvantages from the "unlimited" host packages. Apart from sharing server space I heard that speed can get very low and if you exceed 1000 visitors they also cut you of or something. Is this true? I was considering signing up with HostGator but I have my doubts now…
Any suggestions and/or advice?
