Moving country domain to a sub-domain of main site

So the main site is website.com and there is a german version of same website at website.de
What we need to do is 301 move the .de to de.website.com – what is the best way to do this ? Just do the standard wildcard 301 to subdomain?
Also, at the same time we are planning on doing a complete redesign of both websites with adding new content as well, so what is the best way to approach this ? Do the redirection first and then after a while do the redesign?
