The restaurant business has been in the pits for the past two years. But there’s always a tasty, extra-crispy lining if you look for it: As far as we know, no one has found a mouse in their fried chicken lately. And many quick-service restaurants have supersized sales in this downsized economy. For marketers, there’s a whole menu of restaurant trends that can help them get to where their diners want to be.
“The fast food business is doing better because people are trading down,” says Eric Giandelone, Director of Foodservice Research for market research company Mintel. The firm surveys 600 restaurants each quarter for its Mintel Menu Insights report, and also does ongoing consumer research.
